I have a late meeting then I'll need to go home and change and make excuses for why I'm missing family dinner yet again so it'll probably be closer to 8. Is that too late?

8 is fine. I'll plan to see you then with dinner on the table for you after a long day.
You're missing family dinner because you are a sociable young lady who's having someone nice cater a meal for you in exchange for good conversation.

I'll say I'm interviewing a personal chef. They might want to know about absolutely everything in my life but they don't need to.

Sometimes it's nice to have something that's just yours for a while, not shared with the outside world or family.
